How to Prepare Matcha Haupia (Coconut Pudding)

Haupia is a classic Hawaiian dessert that is somewhere between a coconut pudding and jello. It's cool, creamy, delicious, and the perfect light treat for a hot day. We're adding our new Coconut Matcha to give our Haupia an earthy and umami boost!

Here's how to make our creamy Matcha Haupia:

Ingredients:

  • 5 TBSP of sugar
  • 5 TBSP of corn starch
  • 2 TBSP of Junbi Coconut Matcha
  • 1 can of coconut milk
  • 1/2 cup of water

Directions:

  1. Add sugar, cornstarch, and water to a bowl and mix thoroughly.
  2. Add Coconut Matcha to coconut milk and mix well.
  3. Heat a pan on low-medium heat, then add your coconut milk/matcha mixture.
  4. Once the coconut milk begins simmering, add in your cornstarch/sugar mixture. Be sure to give the cornstarch/sugar a quick mix beforehand to make sure that it has not settled.
  5. Stir the mixture on low heat continuously, making sure clumps do not form. Continue stirring until the mixture begins to thicken. It will have a glue-like texture (about 10 minutes). 
  6. Once the mixture thickens, pour it into an 8x8 pan to cool. Cool until room temp, then cover and place in the fridge for about 2 hours to completely set.
  7. After your Matcha Haupia has set, you can cut it into squares and enjoy!
